Sundried Tomato Chicken

Flavourful and a crowd pleaser! Pairs well with pasta noodles or fresh bread and a green salad.

INGREDIENTS

1/3 cup fresh basil leaves

2 cloves garlic

½ tsp chili flakes

210 ml jar sundried tomatoes in oil

1/3 cup grated Parmesan cheese

4 skinless, boneless chicken breasts

1 tbsp olive oil

Salt & pepper

dIRECTIONS

  1. Preheat oven to 425°F.  Insert sheet pan in oven.
  2. In a food processor, combine basil, garlic, chili flakes and sundried tomatoes (including oil). Add salt and pepper and pulse until finely chopped. Transfer to a bowl, stir in cheese and set aside.
  3. Cut a pocket into each chicken breast being careful not to slice through. Fill the pockets with 2 tbsp of sundried tomato mixture.
  4. Brush each chicken breast with oil and season with salt and pepper.
  5. Transfer chicken to preheated sheet pan, breast side down and bake 20 minutes or until cooked through.
