Baked Salmon with Honey Citrus Glaze

A light tasting glaze that pairs well with salmon.

INGREDIENTS

4 x 180 g salmon fillets, skin on (or ~ 600 g salmon fillet)

4 tbsp honey

3 tbsp lime juice

2 tbsp orange juice

Salt

Ground black pepper

Nonstick cooking spray

Optional:

1 tbsp butter in glaze

Splash of tequila in glaze

dIRECTIONS

  1. Spray or grease 9 x 13 baking pan.
  2. Heat oven to 400°
  3. Place salmon skin side down in prepared baking pan.
  4. Combine honey, lime juice and orange juice; stir until well blended.
  5. Sprinkle salmon fillets with salt and pepper then spoon honey and juice mixture over fillets.
  6. Bake for 10-12 minutes or until the fish flakes easily with a fork.
